It is the season of the grape, the grape harvest is coming, and I am a proud vineyard owner. I am excited to see what new, vibrant grape-growing techniques and varieties will appear. As such, I have been looking for a way to incorporate my passion into food for a long time. The grape harvest has brought us so many delicious, flavorful, and wonderful foods that I knew I had to try.
nazanin has been around for a while, and its name is a play on words for “new wine.” New wine is the process of adding certain additives to the wine to alter its taste and/or appearance. The first nazanin was produced in the late 1700’s by a small Italian producer in Rome. There are now more than 150 producers worldwide producing nazanin, the process of which has been refined.
The grape, malolactic fermentation, and age of the wine all influence taste, color, and appearance. The grape itself is the strongest contributor to the differences between nazanins. The second biggest contributor is the amount of time the wine has been in the bottle. Since nazanin is the process of adding certain ingredients to wine to reduce its taste, less aging time produces more nazanins.
The biggest contributor to nazanin’s appearance is the way the grapes are grown. Some varieties, like Muscat de Beaumes de Venise, are grown in small, dense clusters and have a natural color. Others, like Muscat de Beaumes de Pape, are grown on the more open, rolling hillsides and are more uniform in appearance.
I feel like I’ve been talking about wine for far too long here, but I thought I’d throw in a little nazanin talk.
